In trying to think of a good cookie for Labor Day weekend, I thought of all the strikes and issues we had in this country (and others) to get fair pay for fair hours. I realize we’re not all wonderful yet, but in honor of the people who went through some aggravation for unions and fair working conditions, here is a recipe I got when I took a cooking class as a preteen.
Aunt Emmeline’s Aggression Cookies (no idea who Aunt Emmeline was)
1 cup brown sugar
2 cups rolled oats
1 cup butter
1 cup flour
1 tsp baking soda
Preheat oven to 350. Put all ingredients into a large bowl and mix with your hands (the more you mash and squeeze the better you feel and the better the cookies taste). Form into small balls and put on an ungreased cookie sheet. Butter the bottom of a glass or plastic cup. Dip the glass in granulated sugar. Mash each ball flat with the glass. Redip the glass in sugar before each cookie. (Or just flatten them with your hands.) Bake for 8-10 minutes.
