Oat Macaroons

This is a recipe from a lady at the church I grew up in in Maine.  She is a wonderful cook, and her food is always healthy as well.  She had huge gardens, berry patches, and always canned and froze and dried a ton of food!  My earliest memory of her house was walking through her basement and not realizing there was a floor-level sunken hot tub, covered by a soft cover, and walking straight into it!  I remember she gave me something sweet to eat because I was soaking wet and crying (I was very little) — it might have been these cookies!

2 cups quick oats

1 cup unsweetened coconut

1/4 tsp salt

2/3 cups raisins or dates (you know I’d put dried cranberries!)

3/4 cup water

1 tsp vanilla

1/4 cup honey

Preheat oven to 350.  Mix dry ingredients together.  Combine liquids and add to oat mixture.  Drop spoonfuls onto lightly greased or parchment paper-lined cookie sheets.  Bake for 15-20 minutes, until browned.
