Orange Almond Cookies

These are traditional Greek cookies for the time of Lent, since they have no eggs or added fat.  The name for them in Greece is Kwarezimal, from the forty days of Lent.

Kwarezimal

2 cup ground almonds
1 1/2 cups sifted plain flour
1/3 cup sugar
1 tsp cinnamon
1 teaspoon orange flower water or substitute
Grated rind of 1 lemon, 1 orange and 1 tangerine
5 tablespoons thyme honey
Chopped pistachios, almonds,walnuts or pecans and grated orange zest to decorate

Mix all the ingredients together and add just enough water to make a stiff dough. Knead lightly and shape into small bite size ovals. Place on a baking sheet and bake at 375 degrees F for about 10 minutes.

While they are still hot, brush them with thyme honey and sprinkle with orange zest and chopped nuts of your choice.
