Peach-Ginger Cookies

I got a couple boxes of peaches.  School starts Monday, so most of them will just be eaten or go in the freezer.  I’ve made a couple fresh peach pies and a little jam, and thought I’d try some cookies. Peach and ginger always seem to go so well together.  I found this recipe on food.com, but of course had to tweak it a little — I added crystallized ginger. 🙂

Peach-Ginger Cookies

1/2 cup butter, softened

1 cup sugar

1 large egg

2 cups flour

1/2 tsp baking soda

1/4 tsp nutmeg

1/4 tsp cinnamon

1/8 tsp ginger

1/8 tsp ground cloves

1/8 tsp salt

3 peaches (medium fresh ripe)

crystallized ginger pieces, diced

Preheat oven to 375.  Cream butter or margarine and sugar in a bowl. Add egg and beat until light and fluffy. In another bowl mix flour, baking soda, and spices. Stir flour mixture into egg mixture, a little at a time. Peel, pit and finely dice peaches; stir into cookie mixture. Stir in ginger. Drop dough by rounded teaspoonfuls onto cookie sheet. Bake at 375°F for 20 minutes until cookies are brown on top. Cool thoroughly.
