Today we had no school in Minnesota because of the extremely cold temperature with wind chill at -44, so I got to stay home (tomorrow too!). I did run to the bank for a minute, so I took them some warm cookies to cheer them up. Among other cookies that I’d had in the freezer from our caroling party in December, I put in some pumpkin cinnamon cookies I’d made with cake mix. Of course I warmed them up in the oven before I brought them, and they were just like fresh-baked. Gotta get them when you can!
I’m sure there are many permutations on cake-mix cookies out there on the interwebs, but these at least had one part that I didn’t get from online — the cinnamon chips. Not claiming that no one else has thought of it, but I didn’t get it from anyone. And the cinnamon chips turn into little gooey-chewy crystallized goodness in the oven, so it’s a win all round!
Pumpkin Cinnamon Cake Mix Cookies
1 box spice cake mix
1 15 oz. can pumpkin (not pumpkin pie filling)
1 bag cinnamon chips
Preheat oven to 350o. Mix ingredients together (can add a little milk or liquid chai tea mix if it’s dry, but it shouldn’t be). Using two spoons or a cookie scoop (medium size from Pampered Chef), scoop out onto sprayed or parchment paper-covered pans. Bake 15-18 minutes or until fairly well set. Immediately remove from sheet and place on cooling racks. Enjoy!
These cookies are very good with cider, of course!
